There are a couple of ways of modifying the GUI for your users.
Method #1
Go "Bar" hopping by disabling the display of selected "Bars" (i.e., Tool Bar, Button Bar, Status Bar....) from the Capture Software Options menu:

By disabling the Button Bar, Status Bar, Tool Bar, and selecting the Default Scanner Bar, the Capture Software Main Window will now look like this:

You need to be careful though...for if you also disable the Default Scanner Bar, then the Start and Stop Scanner buttons will no longer be displayed!
Method #2
Disable the use of selected tools and Main Window options through the use of User Profiles.
By default, Capture Software comes with one user and one user group that has access to all Capture Software functions and capabilities. Through the use of User Profiles, you can establish new users and user groups while at the same time reducing user access to selected functions. The end result can be a simpler user interface.
The following example describes the steps you would take to create a new user called Operator. The Operator user will not have access to the following Capture Software features:
- Application Setup or creating new applications
- Page Setup or selecting a different Page Setup for scanning
- Post-scanning tools: Rescan, Insert, Delete end of Document, Crop, Blank, Copy, Copy Area, Print, Split, Move
- Other features such as Attach and Delete Document
1) Select Properties from the File menu and click on the User Profiles...button.
2) Click on the Groups button and then click New.
3) Click OK to create a new group based on the All options enabled group.
4) Type in the new Group name Basic.
5) For each Capture Software feature Option (as selected in the drop-down list box) there will be a set of user privileges that can be enabled/disabled:

Disable (or uncheck) the following privileges for each of the Options:

Document | Attach; Delete; Delete range, CDVue, |

Tools | Disable all privileges except for Delete and Rotate |
6) Click OK until you get back to the Users dialog. From this dialog click New to create a new user.
7) Type in the new user name of Operator (for this example, also set the Password to "operator"). Make sure you select Basic as the member group:

8) Click OK to save the new user and group. Log out of Capture Software and log back in as the Operator:

9) The Open Application window that is displayed will also be simpler:

10) After opening up or creating a new batch, the Capture Software Main Window will now look like this for the Operator user:
